Happy hump day friends! I can’t believe we’re already half way through the week!
I woke up right at 5:45 again yesterday morning. I’m liking these super early natural wake-ups 😉 . I read for a bit and then headed to my sister’s spin class! Pre-foot break, I went to her class every week, so it’s been great to be back. My foot did hurt a bit, but I don’t think I made anything worse.
For breakfast I had my usual Starbucks and GOLEAN cereal with strawberries and almond milk. I find this breakfast so filling – it keeps me full until lunchtime!
For lunch I had a big salad with baby spinach, carrots, tomatoes, an avocado, and light Italian dressing.
Then I got outside for a short walk! I spent the rest of the afternoon busy busy at work, and snacked on a Chocolate Chip Cookie Dough Quest Bar. As much as I’m liking No Cow Bars/trying to be mostly vegan, I seriously miss my Questies. This tasted soooo good.
I left the office a little before 5:00 and headed to a cardio pilates class! It was a great mix of cardio moves (jumping jacks, mountain climbers, plank jacks) and pilates moves (mostly abs and butt work). It felt great to really burn out my muscles.
When I got home I had a GT’s Gingerade kombucha.
And cooked up a huge stir fry with tofu, carrots, broccoli, jicama, peppers, radishes, and celery. I also made some green chili and cilantro polenta on the side, because I was feeling super hungry.
I spent the rest of the evening reading (my book club is tonight and I’m only about half way through the book, ah!) and doing some more BIP catch-up. I hope you guys had a great Tuesday and are ready to conquer this hump day!!

I’ve never actually had polenta! I bet that’s a good feeling waking up naturally at that hour! Positives of traveling!

I LOVE polenta! You can do so much with it and it’s so comforting. One thing I like even more than that is a QUEST BAR! They are a treat for my every afternoon after school heated up in the microwave–heaven.

I don’t think I’ve ever had a polenta, maybe at a restaurant though I can’t be sure. It’s a type of grain right? I love waking up early since I’m a huge morning person. I hope you can finish your book in time for the meeting tonight!

You should try it! Yes, it’s a type of grain and it’s so yummy and really easy to prep. And thanks – I’m gonna try to read a lot during lunch/after work!

How to you make it? I would be down to try it as a substitute to rice!

I usually just slice it up and saute it with some coconut oil. You can also add water and mush it up/heat it up to make it more the consistency of grits/oatmeal. Let me know if you try!

I’ve never had polenta but I’d love to try it! My husband is not really crazy about the no-meat thing…typical guy right??

It’s a grain so it tastes pretty plain/grainy unless you get a flavored one/add spices! It’s delicious.

Yum, you totally have me craving polenta! I like it any way it’s prepared, haha. I love that you go to your sister’s spin class! When I used to teach spinning, my mom and sister would take my classes and it was so much fun!

I do love polenta as well. I have a couple of different variations and veggie add ins. sometimes I do an eggplant parm layered with it

It’s a grain with sort of a plain/grainy taste unless you add some spices! So yummy.
