It’s Friday! Salads on Salads

Hey guys! HAPPY FRIDAY!

I started my Thursday with a solid workout at the gym – I did 60 minutes on the elliptical. I was planning on doing my regular Thursday workout, but I was feeling good on the elliptical and wanted to know what happened in “Catfish” so I kept going. I really like watching quality TV while at the gym.

Then I headed to work and grabbed a much-needed Dunks iced coffee on the way.

I had a meeting right away so I didn’t have time for breakfast until a little later in the morning. A big mug of Peanut Butter Puffins today!

At noon I had a work lunch at The Cheesecake Factory. We sat outside and I got the fresh vegetable salad with no dressing. I actually love this salad – it has so much in it: asparagus, green beans, tomato, cucumber, roasted beets, apple, edamame, radicchio, romaine, and white cheddar!

We grabbed coffees after lunch because we were all pretty tired (we sat outside in the sun for lunch) and we had some important things to do for the rest of the afternoon. I got a tall Blonde roast with a splash of almond milk.

So the project I’ve been working on this week/so stressed about is actually really cool. I am having blind and low-vision users come to our office to participate in accessibility tests for our product. Basically, we are trying to make sure that blind people can use our software! These tests started today and will probably be going until Monday. So much fun, but lots of stress with the planning/set-up. But I didn’t stress eat today, woohoo 🙂 .

I left work pretty late and my boyfriend picked up sweetgreen for dinner for us. I was planning on cooking but when I saw that they just started their “late summer” menu, I told my bf we needed it tonight. I got the Peach + Goat Cheese, with mesclun, peaches, goat cheese, roasted almonds, basil, and balsamic vinaigrette. It was so good and refreshing but def could’ve used some more peaches…

I’m headed to my orthopedic surgeon appointment this morning to get an X-ray and hopefully get my boot off! Keep me in your thoughts 😉 and I’ll update you with what happens in tomorrow’s post!

Good morning!

Ugh yesterday was a rough day. I don’t have much to write about because work has been so busy lately and I haven’t been able to focus on much else. But of course I wanted to check in with you guys!

I woke up yesterday morning and got my Wednesday workout in: 30 minutes on the bike (I did a hill climb program), arms, and butt.

Then I headed to work and had my usual Starbucks Blonde roast and a Cookies and Cream Quest Bar.

I had meetings literally all day with a short lunch break, when I was able to shove this salad in my mouth. It was actually the best combo ever, though – spring mix, an avocado, carrots, a ton of super ripe strawberries, and a light balsamic dressing.

Then the rest of the afternoon was spent in a frantic whirlwind of meetings and stress. I had an apple around 3:00, and then around 4:30 I was starving and knew I had to stay at the office for a while. I saw some leftover meeting food laying out in the kitchen and made a little bowl of pasta salad… then I found some trail mix and other random things around the office and mindlessly snacked until I left for the day, UGH.

It was also one of our summer intern’s last day today, so it was sad saying goodbye! She was awesome. I love having summer interns… I’m really going to miss them.

So after that frantic workday I finally left and took the subway home. I was planning on making some sort of yummy treat when I got back because I haven’t done that in a while (and experimental vegan baking is becoming quite a passion of mine) but as soon as I got home all I wanted to do was just chill. Same thing as yesterday. When I completely exert myself for eight plus hours straight at work, I have trouble continuing the exertion throughout the night. So couch and TV night for me. I didn’t even feel up for making dinner.

*SIGH*

I have a feeling today and tomorrow are going to be just as stressful; I have some pretty important meetings for which I’ve been preparing for weeks. My goal for today and tomorrow is to NOT stress eat/start mindlessly snacking. Doing that will not help with anything. Whenever I feel the urge, I am going to take some deep breaths and think about the fact that most of my stress will be gone come Friday night.

Sorry for all the venting. Expect some more interesting, vegan-dessert filled posts in the near future. But for now I’ve got to…

Saying Bye to a Friend :( and the Busiest Day!

Hump day hump day! We’re already halfway through the week!

As usual I woke up yesterday right before the alarm went off and headed to the gym. I got my Tuesday workout in: 30 minutes on the elliptical (I did a tough interval workout – 30 seconds on, 1 min off), abs, and legs. Then I rushed home to join an 8:00 am work call (the start of a completely meeting-filled workday 😮 ).

After the call I jumped in the shower and went to work. I was famished by the time I got into the office, so I had my regular Starbucks and a Rocky Road Quest Bar. Love this kind.

I had to scarf down my salad during a lunch meeting… not really the quietest of meals to eat. I felt like my carrot-crunching was ridiculously loud. But oh well, I had no other time to eat it.

I finally took a break to grab some tea with my coworker/friend who’s moving to San Diego on Friday 😦 today was her last day! It was great to catch up with her and get some Teavana. I got their “Defense” wellness tea, a white tea with zesty orange, lemon, lemongrass, cinnamon, and ginger. De-lish.

I also snacked on some Greek yogurt later in the afternoon.

And then I finally left the office. It felt like such a long day, and I felt like I got no actual work done because I was in so many meetings! GRR!

When I got home, I sipped on some Guava Goddess booch.

And I cooked up a spicy buddha bowl with lentils, tofu, broccoli, carrots, and snow peas. So so so yummy.

My boyfriend’s trying out this work shirt service where someone comes to your house, takes your measurements, and has you pick from a big binder of fabric which shirt(s) you’d like to order – pretty cool, especially if you need to wear nice shirts to work every day! So around 7:00, the woman who fitted him came over to deliver a shirt he got. He loved it and ordered a couple more!

I had such a busy day at work that I was completely exhausted by the time I got home. All I wanted to do was chill and watch TV, so that’s what I did (once the shirt lady left). Another crazy Tuesday night ova here.

Get to Know Me a Little Better!!

Happy Tuesday people! We got through Monday woohoo.

I had so much trouble waking up yesterday morning… our bedroom was freezing from the AC blasting and I was under three blankets – so warm and cozy. I think I need to stick to waking up early on the weekends so Monday mornings aren’t so hard… but maybe not 😉 .

I somehow got myself out of bed and to the gym. I’m doing this workout plan this week – it’s a good mix between cardio and strength training, and the workouts fly by! Today’s workout was 30 minutes on the bike, arms, and butt. Solid start to my Monday. BTW – I’m going to create a new workout plan for myself once I get this boot off on Friday, depending on what the doctor says I can/can’t do, so stay tuned for that.

I picked up some much-needed Starbucks on my way to work, and drank that with a Chocolate PB Quest Bar for my brekky.

For lunch I had a big salad with baby spinach, carrots, so many tomatoes, an avocado, and light balsamic. Yum.

That kept me full well into the afternoon, but I still snacked on an apple the size of 1/2 my face before leaving the office.

When I got home I drank the rest of the kombucha I started on Friday. I usually drink a whole booch in one sitting, but for some reason wine sounded a little bit better to me Friday night 😉 .

Then my sister and friend came over to watch The Bachelorette season finale!! We ordered sushi, of course. I had my usual simple avo and cuc rolls, along with some miso soup and a little salad.

I thought I’d share ten random facts about me, since I’ve been blogging for about a month now and I haven’t done this yet!

I totally knew my pic was being taken… I’m not normally smiling like this when I run 😉

  1. I’m half Greek (my dad came to America when he was 18) and I grew up spending many of my summers in Greece!
  2. I have a younger sister who’s 2 1/2 years younger than me, but we look like identical twins. Whenever we’re together we get asked if we’re twins at least three times.
  3. I have a black belt in Kenpo style Karate… so don’t mess with me. (JK I think I remember literally nothing – I stopped doing martial arts years ago.)
  4. I am obsessed with all animals, especially dogs. Point out any dog to me on the street and I’ll tell you the exact breed. I’ll even tell you what breeds make up a mutt.
  5. I used to compete in road races all the time – the half marathon was my favorite (my PR is 1:38 – 7:30 min/mile) and I ran the Boston Marathon! But road racing has lost its magic for me and I’m currently on a long, possibly never-ending break from it… and I’m so much happier. More on this topic to come in a future post 🙂 .
  6. My boyfriend and I met on an online dating app and we’ve been together for over three years and now live in Boston together!
  7. I majored in “Engineering Psychology”.
  8. I spent a month living on a sailboat in the Caribbean. I think we only walked on land three times the whole month. I need to do this again!!
  9. I am a complete neat freak. I need everything to be in its place and everything around me to be clean. (This is quite the major bickering subject for my boyfriend and I 😉 .)
  10. I can break dance. Sort of.

Day 3 with a Little Hangover

Hiya, happy Monday!!

I hope you guys had a wonderful weekend. Mine was great but felt way too short. It’s okay, only five more days ’til the next one…

We slept in a bit yesterday since we stayed out pretty late Saturday night. When we woke up, we headed to Whole Foods because my boyfriend was craving cereal and we ran out. We also stocked up on seltzer cans and other random goodies.

Then I headed to the gym. One hour on the elliptical donezo while watching The Hangover. I had a little hangover so it was sort of appropriate 😉 . Then I stretched and met my boyfriend at Dunkin’.

Our next stop was GNC to stock up on my favorite Questies. My boyfriend picked up some of these Quest chips – has anyone tried them? I’m skeptical…

When I got home I had a White Chocolate Raspberry Quest Bar. All the chunks.

Then I showered, chilled, and did my meal planning for the week. Soon after, we headed out to run some more errands and do our weekly grocery trip. We didn’t get home until around 5:00, so yet again I was out and about all day and didn’t bring food/have time to eat what I had planned. As soon as we got home, I cooked up a quick dinner of sesame ginger tofu, lots of brussels sprouts, and Sriracha.

We went on a post-din walk through a park in our neighborhood because it was beautiful out. My boyfriend picked up an ice cream cone for the walk, but I somehow didn’t get one. Self control!

Then we headed to our friends’ apartment to watch Game of Thrones.

Our friends just got engaged so we brought over some champagne and chatted about the proposal for a while. Such a cute story 🙂 I love them and am so happy for them!!

Like Saturday, I was out and about most of the day and ate a lot less than I had planned. That’s okay though – I never felt too hungry. Definitely a successful day 🙂 and a successful weekend! This weekend has shown me that making a plan and taking things one day at a time really helps me to stay focused and stick to my goals. I also learned that I really don’t need to be snacking to feel satisfied. I feel like I’m out of my funk and I’m definitely going to keep up this mindset this week! And expect a weight update in Saturday’s post 🙂 (I forgot to weigh myself this week). Also expect a foot update! I have an appointment Friday morning so I will *hopefully* be saying goodbye to da boot.

Day 2 – Spontaneity Wins

Happy Sunday! I hope you’ve had a great weekend so far.

I woke up yesterday and headed to the gym with my boyfriend. I did 60 minutes on the bike – I did this “mountain climb” program and it made the workout fly by! I like switching it up between doing the programs on the machines and making up my own.

I grabbed some Dunks iced coffee after (and chugged it before I got a chance to take a picture).

And ate a Chocolate Brownie Quest Bar. Tastes just like a gooey brownie (especially if you heat it up in the microwave for 10 seconds).

Then I did a little at-home “spa day” – I did an exfoliating face mask and painted my nails. I like doing this for myself every weekend! Aren’t my nails cute as a button? (That’s what this Essie polish is called hehe.)

After chilling for a bit, cleaning the apartment, and doing some laundry, my boyfriend and I headed out to run a bunch of errands around the city. We had to get some gifts for friends’ birthdays and pick up a few other things. I kind of lost track of time and didn’t bring any food with me, and we didn’t get home until around 5:00. I went right to cooking dinner because I was starving! I made a huge stir fry with tons of veggies: red and green peppers, onions, mushrooms, bok choy, carrots, broccoli, bamboo shoots, water chestnuts, snow peas, and baby corn!

My boyfriend and I watched “Table 19” while drinking some of the amazing wine that my mom’s boyfriend gave me for my birthday 🙂 . Then we decided to meet up with some friends to continue my boyfriend’s promotion celebrations. We went to a fun bar nearby and drank cocktails and ate some snacks while playing pool.

Here’s my step count for the day.

So as you can see, I didn’t quite follow the plan I made for myself for yesterday:

Saturday

Breakfast: iced coffee and Quest Bar
Lunch: salad
Snacks: yogurt and kombucha
Dinner: Asian vegetable stir fry with tofu
Water: 12 cups

I was out and about most of the day and didn’t have time to make lunch and eat my snacks. I also ended up having a couple of drinks and eating some snacks when we went out at night. I didn’t sway completely from my plan, but I could have done a bit of meal prepping for lunch and avoided the snacks at night. I’d still consider it a successful day, though! I think a little bit of spontaneity on the weekends wins over following a strict diet/workout plan 🙂 . Here’s today’s plan (very similar to yesterday’s):

Day 1 and the Cutest Pup You’ll Ever See

Hey guys! Happy Saturday to you 🙂 .

I woke up yesterday morning feeling super motivated to start my weekend eating/workout plan! I headed straight to the gym to jump on the elliptical. I was completely drenched in sweat by the end of the hour – it felt amazing and so detoxifying! Then I stretched for a bit and walked home. Friday workout – CHECK!

I picked up my regular from Dunks on my way to work: toasted almond iced coffee with almond milk. My breakfast was that and a Mint Chocolate Chunk Quest Bar. Yummo.

For lunch I had a huge salad with baby spinach, carrots, tomatoes, cucumber, avocado, and a light balsamic vinaigrette. I swear the spinach is hiding somewhere below all those toppings…

I was also able to get outside during the lunch hour to go on a walk along the river and listen to “Orange is the New Black”. I watch the show so I was interested in reading (listening to) the memoir that started it all! It’s interesting but definitely not as good as the show.

I love getting outside for a bit during the workday! I also had to get some steps in 😉 . Here’s a snap from my walk of the beautiful Boston skyline and a cute lil sailboat. Random fun fact about me: I was on the sailing team in college!

I spent the rest of the afternoon being productive at work and drinking lots of water, seltzer, and tea, and snacking on this delicious Pink Lady apple.

I left the office around 4:30. When I got home I cracked open a cold one 😉 .

And then I started cooking din. I made a big stir fry with sesame ginger tofu, onion, mushrooms, and brussels sprouts. It was SO good and filling. Definitely hit the spot.

I spent the rest of the evening celebrating my boyfriend’s promotion (!!) with a two-person, three-hour dance party. We do this often.

Oh and here’s my step count from the day. Crushing step goals with the boot… bootyah! (What is wrong with me?)

So here’s the plan I made for myself for yesterday:

Friday
Workout: 60 minutes elliptical and 10,000 steps
Breakfast: iced coffee and Quest Bar
Lunch: salad
Snacks: apple and kombucha
Dinner: tofu, lentils, and veggies bowl
Water: 12 cups 

And as you can see, I crossed off everything and I followed my plan completely EXCEPT I substituted lentils in my dinner for some red wine to celebrate the promotion. Plus my dinner was so big I didn’t even need the lentils… I think that’s an okay switch for a special occasion 😉 .

It seriously felt SO good to stick to a plan and not mindlessly snack like I’d been doing all week. Yesterday showed me that I really don’t need all the snacking to stay full/happy. I feel better already, and I can’t wait for the rest of this weekend! Here’s today’s plan:

Saturday
Workout: 60 minutes bike and 10,000 steps

Lunch: salad
Snacks: yogurt and kombucha
Dinner: Asian vegetable stir fry with tofu

Someone told her that if she puts a tight shirt on him it would work well as a thunder jacket that people buy… I just had to share with you guys.
