A Quiet, Cozy Saturday with the BEST Spaghetti Squash Recipe

Hey friends! Happy happy Sunday!

Frankie and I have been enjoying our weekend dog-sitting at my mom’s house in the suburbs. It’s been so relaxing and we’ve been doing some major wedding planning πŸ™‚ .

We woke up at 6:30 yesterday morning, packed up the car, and headed to my mom’s. We picked up some pumpkin Dunkin coffees on our way.

When we arrived we hung out with the pooch, Fletcher, took him on an walk, and spent the next couple of hours addressing our save the dates! I had some GOLEAN cereal with almond milk for breakfast.

When we needed a break from writing addresses and putting on stamps, we went to the local Saturday farmer’s market. We picked up some pumpkin spice soy lattes from a nearby cafe.

And we split this amazing vegetable hummus wrap.

Fletcher was super hyper when we got back to the house, so we took him to a nearby baseball field and played fetch and ran around with him for a while. He was pooped by the time we left.

We spent the rest of the afternoon hanging out, snacking on my mom’s amazing snack collection (I ate way too many banana chips), and doing more wedding stuff.

We wanted a squash-related meal for dinner, so we decided to make spaghetti squash. We cooked it in the microwave while preparing the rest of the recipe: sautΓ©ing minced garlic, red pepper flakes, and broccoli florets. When the squash was done, we scooped out the insides and mixed that in a big bowl with the broccoli, and added lots of spices and some parmesan cheese. We put all of that back into the squash “shells”, added some fresh, grated mozzarella on top, and broiled that until the cheese started turning brown. IT WAS SO YUMMY and so easy!

We went to bed pretty early, since this one was pooped as soon as the sun went down πŸ˜‰ .

I hope you guys have the best, most relaxing, healthiest Sunday! I’m off to a nearby 60-minute spin class this morning to kick off my Sunday. I’m planning on using today to kickstart a healthy week by only eating clean foods only when I’m hungry (no snacking)!!

Okay NOW Summer’s Over and Help Us Plan Our Dinner!!

Happy weekend guys!! I hope you have something relaxing and fun planned for your Saturday πŸ™‚ .

I woke up around 6:00 am yesterday and went to a spin class! Felt good to get my sweat on. Then I went to work and picked up some Dunks pumpkin coffee, and I had my regular flax oatmeal with strawberries for breakfast.

The morning flew by! For lunch I had a salad with spring mix, half of a red bell pepper, half of a slightly-too-ripe avocado, baby carrots, and a light Italian dressing. I also had a Fage 0% Greek yogurt to get in some more protein!

The afternoon went by a little bit slower – I had a meeting-less day which was nice but sometimes I like to split up my screen time with some human interaction πŸ˜‰ . I snacked on my fav Chocolate Banana Bread No Cow Bar around 3:30.

And sipped on lots of lemon seltzer throughout the afternoon. I was on the verge of snacking on some candy or trail mix, but I resisted and opted for bubbly water instead. Plus, my company has this fun machine.

I left work a little bit early (yay Friday) and took the subway home. I consider it officially fall when we take our AC’s out of the windows and I pack my summer clothes into a box and unpack my warmer, winter clothes!

I took a break from all the packing to sip on half of a Gingerade booch.

And to cook up a quick stir fry of tofu, red pepper, onion, and carrots. With lots and lots of Sriracha.

Frankie and I spent the rest of the evening enjoying some red wine, snacking on some veggie sticks (a.k.a. “healthy” chips) and a little chocolate, and watching “Nathan for You”.

We’re leaving to dog-sit this morning – I’m super excited for a relaxing weekend away from the city. I can’t wait to hike, cook some yummy fall meals, and work on addressing our save the dates! Plus, I’m in need of some serious golden retriever time. Have a great day πŸ™‚ .

Friday Favorites #6!

Hi hi! TGIF! I wanted to start off today’s post with some Friday Favorites, of course. Here’s what I’ve been loving this week:

1. THE WEATHER! I know I keep talking about this (and so does everyone) but what is better than crisp fall weather?! And this week it finally arrived in Boston. Yesterday was actually almost too cold! But I am so excited that it’s finally feeling like fall.

2.Β “The Given Day” by Dennis Lehane.Β This was my pick for our new book club book and I’m really enjoying it so far (although our book club books have a 500 page limit and this one’s 720… oops). I love that it takes place in Boston at the end of WWI – so cool to learn some history about my city!

3. Bath and Body Works fall candles! I picked up two this week – “Sweet Cinnamon Pumpkin ” and “Sweater Weather”. They smell so strong and amazing and make my apartment feel so fall-ish! I love burning a candle as soon as I get home from work, as a little comforting treat πŸ™‚ .

4. Vegan pumpkin cookies. I mentioned making these in this blog post, and I ended up bringing them to book club and they were a hit! They’re super healthy and have the perfect amount of pumpkin taste. Plus the texture was awesome. Definitely will be making these a lot this fall/winter!

Sooo pretty much all fall-based Friday Favorites from me this week πŸ˜‰ .


I woke up yesterday and went on a nice five mile run, averaging about 8:30/mile. Finally getting some of my speed back since breaking my foot! It also felt so refreshing to run when it was in the low 50’s and breezy.

When I got into the office I enjoyed a Dunks pumpkin coffee and a bowl of flax oatmeal and strawberries!

For lunch I had a salad with spring mix, carrots, tomato, avo, and a light balsamic, with a Greek yogurt on the side. I’ve been having a variation of this lunch every day this week and it’s been really satisfying!

I got out for a walk after lunch and met Frankie for coffee (well, I got a green tea)! He had a meeting near my office πŸ™‚ I love seeing him in the middle of the day!

I spent the rest of the afternoon working, and took a break to snack on a little too much Halloween candy from the office 😦 .

I went home around 5:00 and just read and chilled. Frankie picked up sweetgreen salads for us – I got their new fall bowl, “Curry Cauliflower”, with arugula, quinoa, roasted curry cauliflower, herb falafel, cilantro, cabbage, raisins, hot sauce, and cucumber tahini yogurt dressing! It was SO good and it felt good to nourish my body with that healthy salad after a little too much candy earlier in the afternoon…

FINALLY My Favorite Weather!!

Hi friends! Happy Thursday.

I didn’t get to bed until around 11:30 on Tuesday night (so late for me πŸ˜‰ ) so I decided to sleep in a little yesterday morning instead of do a morning gym sesh. So I woke up and headed straight to the office.

I picked up a Dunks iced coffee with one pump of pumpkin syrup on my way in.

And had flax oatmeal with lots of strawberries mixed in for brekkie!

After my two morning meetings I took a gym break. I did an hour on the ArcTrainer while listening to Kaitlyn Bristowe’s “Off the Vine” podcast. So. Funny.

Not sure what I was watching on TV lol……

I showered at the gym, then got back to work. For lunch I had a big salad with a lettuce mix, baby carrots, a super ripe tomato, some avocado, and a light balsamic vinaigrette. I also had a Fage Greek yogurt for some protein.

At 4:00 I went to my company’s yoga class! It was super fast-paced today and it was fun to flow alongside my new team member πŸ™‚ . After class I snacked on a Vanilla Almond Crunch Questie.

And then I walked home. It was my FAVORITE weather in Boston last night – overcast and high 50’s.

I also made a stop at the library to pick up my new book club book! When I got home, I sipped on half a Gingerade booch.

And made a very comforting zucchini pasta for dins! It was so quick and simple, and exactly what I was craving; whole grain penne, steamed mini zucchinis, and a little vegan butter and parmesan!

Then Frankie and I caught up on “This is Us” while drinking pumpkin beer and snacking on some Halo Top. Not much else going on over here – it was a quiet hump day. Hope you guys have been having a great week – almost to the weekend!!

Book Clubbin’ and Why I Stopped Running Road Races – Don’t Hate Me!!!

Hey friends! Happy HUMP DAY! This week is just flying… probably because I had Monday off πŸ˜‰ .

I woke up yesterday morning in the midst of a terrible nightmare. Do you ever jolt awake and still feel like what you were dreaming about really happened? UGH.

Then I headed to my sister’s 7:00 am spin class, which put me in a much better mood! The theme of class was “Selena vs. The Weeknd” so it was a fun, heart-pumping playlist.

I headed to work and picked up Starbucks on my way in. I drank that and ate a big mug of flax oatmeal and SO many strawberries.

I ate lunch outside: a salad with green leaf lettuce, frisee, radichio, carrots, tomatoes, avocado, and a light balsamic dressing. I had a Greek yogurt for dessert!

I went on a little walk along the river after lunch because it was so nice out (still not fall enough, though!). The rest of the workday flew by – I had lots to catch up on and had to attend a few meetings. I snacked on a Chocolate Brownie Quest Bar later in the afternoon.

I left the office at 5:30 ish and took the subway home. For dins I cooked up a big stir fry with tofu, cabbage, carrots, broccoli, jicama, bell peppers, radishes, celery, and lots of Sriracha drizzled on top.

And then I left for book club! As I’ve mentioned in previous posts, this month’s book was “The Disaster Artist” by Greg Sestero and Tom Bissell, about the production/filming of the movie “The Room” (a movie sooo bad that it’s good). We had some fun discussions, drank many bottles of pinot grigio, and snacked on cheese and crackers, my pumpkin chocolate chip cookies, avocado hummus, etc. (I ate/drank a little too much :/ ).

I got to pick our next book! I picked “The Given Day” by Dennis Lehane (my mom said I’d love it, plus I read his book “Mystic River” and really enjoyed his writing). This book’s set in Boston at the end of the First World War, and is about two families – one black, one white – in a “battle of survival and power” during this hard time. I’ll let you know how I’m liking it – picking it up from the library tonight πŸ™‚ .

Frankie picked me up around 10:30 and we went to bed as soon as we got home! Solid Tuesday.


At dinner on Sunday night, my mom’s boyfriend (who’s an avid marathoner and triathlete) asked, “Hey Marina, since your foot’s all better, when are you gonna run your next race?!”. I felt sort of bad answering, “Never”.

So I wanted to talk a bit about why I’ve chosen not to run road races anymore, or at least not in the foreseeable future. I know that many of you guys are really into road racing, so please don’t be mad πŸ™‚ these are just my personal thoughts/experiences! I’m also curious if anyone else has had similar feelings.

A little about my racing background – I’ve run one marathon, four or five half marathons, a 10K, and lots of 5Ks.

I’m not even sure what’s going on here. A Jingle Bell 5K where we ran 12+ minute miles? Frankie, me, my mom’s bf, my sis, and my sis’s bf!

The half marathon was definitely my favorite distance! I PR’d at 1 hour 38 minutes – about 7:30 min/mile, and that was actually after a poor training cycle with lots of getting sick/missing workouts, and after (stress) eating the biggest meal of my life the night before…

Anyways, here’s why I stopped running road races:

  1. I became too obsessed with times. If I didn’t hit a certain time during a training run, it would ruin my day and I wouldn’t be able to let it go. I considered that workout a failure, even though it definitely still helped me make progress.
  2. I couldn’t deal with the stress the week/night before the race.Β I couldn’t focus on anything a few days before the race – I kept thinking of being at the starting line, shaking from nerves, and potentially not hitting my goal paces. I always overate the night before a race because I was so stressed/needed to get my mind off of it, which made me perform even worse the next day. Why did I do this to myself?!?
  3. It was bad for my body.Β I’ve had so many injuries, and probably had two pulled hamstrings for a year. And I kept running. I thought that my injuries would magically go away and that everything would be fine. I overtrained myself and my body hated me for it 😦 .
  4. It messed with my eating habits.Β See #2 – I often stress ate before a race. I also was constantly famished during a training cycle, so I found myself eating large amounts of food and actually gaining some weight, which stressed me out even more. My body was totally thrown off.
  5. I didn’t have time for other workouts. I’ve always loved yoga, but I rarely practiced during a training cycle, which in turn made me lose flexibility. I also never had time for spinning, hiking, pilates, and the other activities I loved.
  6. I put training above all else. If getting in ten morning miles meant being late to work, I would do it. If getting in a track workout meant skipping plans with friends, I would do it. I don’t know how it got to this point, but training became my priority.

So after my half marathon back in 2015, I told myself I was done. I stopped racing, and I have been so much happier. Now I workout to feel good and to treat to my body. I do whatever workout I’m feeling that week, rather than force myself to do a tempo run (for example). I eat to fuel these less intense workouts, so I’m eating less and feeling much healthier. And most important of all, I stress so much less!

This is just what works for me, of course.Β  I am still so inspired by all of you training and racing, and I love hearing your stories! I also have MANY training plans that I’ve written up (for almost every race distance), so if any of you are interested let me know! BTW, I still totally sign up for silly holiday/costume 5Ks, just for fun πŸ˜‰ .

An Active, Pumpkin-Filled Day Off!

Hey hey! Happy Tuesday. Hope you’ve had a great start to your week.

I woke up right at 6:00 yesterday morning even though I had the day off (I think this is my new, natural wakeup time and I’m not complaining). I spent the next couple of hours going through emails, doing laundry, and journaling, and then it was time for Barry’s Bootcamp!

I took the 9:00 am Arms & Abs class – SUCH a good/hard workout. For those of you unfamiliar with Barry’s, you spend half the class on a treadmill and half the class on the floor doing strength training. It’s such an amazing full-body workout, and you get pushed really hard by the teachers!! Of course I ordered a Skinny PB Vanilla shakeΒ (almond milk, peanut butter powder, vanilla protein powder, and ice) for after class πŸ™‚ . Twenty-eight grams of protein wowza!

I drank that in about eight minutes and then picked up a grande Starbucks Blonde roast with a little almond milk!

I felt super energized after class, so I decided to deep clean my apartment. I blasted T-Swift’s “Speak Now” album (her best album, IMO) and got to work. I feel like the surfaces in my apartment collect SO much dust, so I have to clean them often, meh.

After about an hour of cleaning I took a much-needed shower and made lunch. I had my favorite salad with spring mix, a yummy little tomato (thanks Mom!), carrots, half an avocado, and a light balsamic dressing.

I spent the next couple of hours just hanging out and catching up on Keeping Up with the Kardashians. I made the most delicious pumpkin chai tea – so perfect for fall! And there are little orange pumpkin candies in the actual looseleaf tea πŸ™‚ .

And then around 5:00 I left the apartment to walk to a nearby, super chill yoga class. I love that this class is really relaxing and slow, perfect for when you want a lazy workout/good stretch.

When I got home I sipped on a Brew Dr. kombucha.

And cooked up a huge stir fry with tofu, peppers, onions, carrots, snap peas, snow peas, bamboo shoots, broccoli, mushrooms, bok choy, water chestnuts, and baby corn. I also had a very unattractive sweet potato on the side.

I was in a baking mood after dinner, so I made some vegan pumpkin chocolate chip cookies! I mixed pumpkin puree, almond butter, maple syrup, pumpkin spice, and a little vanilla and sea salt in a bowl, and then added in some dark chocolate chips. So easy and SO yummy! (Frankie and I split the missing one below hehe).

I plan on bringing a lot of these to my book club tonight so I don’t eat them all myself πŸ˜‰ .

Some Monday Goals and a GOLDEN RETRIEVER!!

Happy Monday peeps!!! I hope you had the best weekend, and for those of you going back to work today… stinks to be you πŸ˜‰ . Just kidding, I hope you have a productive day!

Yesterday was the best Sunday. I woke up around 6:00 (I tried to sleep in a little later but was stressing over some wedding planning-related things, haha) so I went on a nice, long walk and listened to “The Disaster Artist”. Boston’s starting to look fall-ish, but it was still too hot out to get the full autumn experience.

I picked up coffee for myself and Frankie and drank that with a Greek pumpkin yogurt for breakfast. This was my first time trying this yogurt and it was SOOO GOOD!!!! The perfect amount of pumpkin flavor and so creamy and filling.

Then Frankie and I walked through the rain to my sister’s spin class. The theme of today’s class was “Nelly, Ludacris, 50 Cent, Flo Rida”. It was lots of fun and a great sweat.

When I got home I showered, did a face mask, did some laundry, and made a big salad with spring mix, baby carrots, grape tomatoes, half an avocado, and a light Italian dressing.

Around 2:00 we left to pick up my sis and her boyfriend and go to my mom’s house in the suburbs to chill with my mom and her boyfriend! We did some wedding planning, watched TV, did some wine tastings, and took this little pup on a walk.

For dinner we drove to an amazing nearby sushi restaurant and met up with my jolly godfather πŸ™‚ . I got miso soup, and Frankie and I split cucumber, avocado, and shiitake rolls.

Then we drove home and headed straight to bed. Such a lovely Sunday!

I’m excited for a new week and some new goals, including eating as cleanly as possible (and only when I’m hungry… no mindless snacking!!) and working out at least six days and really pushing myself!

I’m so excited to have today off from work – I’m going to an early Barry’s Bootcamp class and then hopefully deep cleaning the apartment and doing more wedding planning. I hope you guys have a great start to your week!!

P.S. Guess what guys… there are now Snickers Protein bars!! So now I can’t feel as bad about having a Snickers as my pre-workout πŸ˜‰ .

True Life: I’m Addicted to Trader Joe’s

Hi friends!! Happy Sunday. I hope you’ve been enjoying your weekend so far! I’ve been doing a whole lotta relaxing.

I woke up bright and early yesterday morning and headed to my favorite boxing class with Frankie! I went to this class every Saturday at 9:00 am pre-foot break, and now I’m getting back into it. It’s a 75 minute class – the first 15 minutes are a “warmup” (really hard plyometric exercises that get me dripping sweat immediately), the next 45 minutes include 12 rounds of boxing, and the last 15 minutes are for abs. I feel like this class is the ultimate full-body workout and it’s so much fun.

I picked up some Starbucks coffee after class – a grande Blonde roast with a little bit of almond milk.

And when I got home, I made some oats and flax oatmeal for breakfast. I didn’t have any fruit to add to it, though 😦 .

Then Frankie and I went out to run a bunch of errands (and get some David’s Tea, of course). I got my brows waxed, stopped by Frankie’s new office, and hit up the dry cleaners. It was a super productive afternoon!

When I got home I made a big salad (too big for a regular bowl so had to use a mixing bowl, lol) with baby spinach, grape tomatoes, baby carrots, half an avocado, and a light balsamic dressing.

Then we plopped on the couch and did some hardcore CHILLING. I felt like we hadn’t done this for a while, and it was necessary. When I got hungry again I snacked on a Double Chocolate Chunk Questie.

We finally decided to get off our butts and do something else productive, so we drove to Trader Joe’s (a.k.a. our second home). We got our groceries for next week, and it took every ounce of self control for me to not get every single one of these fall items (although I got the pumpkin oatmeal, soup, and Greek yogurt). Nothing quite like a Saturday night spent at club TJ.

I also got this adorable skull succulent to add to my cactus collection. His name is Petros. (Shoutout to Emily – you inspired me to buy him!!)

After eating, Frankie and I watched the movie “Bachelorette” and went to bed around 11:00. Solid Saturday!!

This morning we’re heading to my sister’s spin class, and then to an amusement park with my sis and her bf!! Hope you guys have the best Sunday, and I’ll see ya tomorrow.

STARSTRUCK and Loving Those Fall Scenes!!

Hey hey! It’s the weekend! I hope you had a fun Friday night and are enjoying your Saturday morning πŸ™‚ .

I woke up yesterday around 7:00 and went on a run. I planned on doing my regular, five-mile loop around the river, but there was a detour so I ended up doing six miles! It was an absolutely gorgeous morning in Boston – it was sunny, smelled like fall, and was in the low 60’s πŸ™‚ . Perfect way to start my weekend.

When I got home I stretched, showered, then took the subway to work. Of course I picked up some Dunks pumpkin coffee on my way in. And I had oats and flax oatmeal with a couple of strawberries for breakfast!

Lunch was a big salad with baby spinach, carrots, tomatoes, half an avocado, and a light balsamic dressing.

I went out for a walk after lunch to get in some steps! I can’t even express how happy scenes like this make me. Fall is THE BEST!

I worked on knocking off lots of items on my work to-do list the rest of the afternoon. And I snacked on a little Jazz apple – I’ve had a bag of these apples in my fridge’s crisper for probably three months and they still taste amazing. What?!

I left work a little early to go to a nearby yoga class. The studio is really small (just one room) which I kind of liked for a Friday afternoon πŸ™‚ .

The yoga was great, too – the perfect mix of flow, strengthening poses, and stretching. I also loved how they decorated the pillar outside the studio.

After class I took the subway to Harvard’s campus for aΒ Jeffrey Eugenides book reading/signing! First, I ate a quick dinner at the sweetgreen nextdoor. I think I’ve eaten sweetgreen four times this week… oops?! I got a salad with arugula, mesclun, basil, cucumber, carrot, cabbage, corn, sprouts, sesame tofu, and spicy cashew dressing.

I picked up some Carrot Cupcake David’s Tea and then headed to the reading. I met up with a few of my good friends there. The first half of the event was Jeffrey reading some of his unfinished work, and the second half was for questions! Then he signed our books. Our first ever book club book (and one of my all-time favorite books) is his book, “Middlesex“, so we were pretty starstruck πŸ˜‰ .

I had a super healthy day yesterday and was finally able to stick to my goals! Let’s do it again today πŸ™‚ . I’m headed to my favorite boxing class this morning! Hope you have a great Saturday.

1. HIKING!!Β I went on Sunday and it reminded me how much I truly love hiking, especially during the fall! There’s nothing quite like working up a sweat while ascending a mountain while your feet crunch on leaves and you breathe in the cleanest air. Excited for lots more hiking this season πŸ™‚ .

2. Reese’s pumpkins. I know I know, candy isn’t even close to being healthy, but one Reese’s pumpkin per day can’t be too bad, especially during October! I, personally, need to focus on keeping it to only one piece, though…Β The chocolate to peanut butter ration is just too perfect.

3. The TV show “Nathan for You”. For those of you with a dryer sense of humor, you’ve got to check out this TV show. I literally cannot stop laughing while watching it.Β  It’s about this guy, Nathan, who visits smaller businesses and tries to help them improve in the most hilarious, ridiculous ways.

4. Trader Joe’s Organic Oats & Flax Instant Oatmeal. I’ve been having this oatmeal with fruit for breakfast lately, and it is soooo good. Not only is it really filling, but it has the best texture with flax seeds in it. Perfect for a cool fall morning!

5. This blogging community! I can’t even put into words how grateful I am to interact with you guys regularly. I really appreciate how you all handled everything that happened in Vegas earlier this week, and I feel like we’ve grown such a warm, nice space we can always come to. Let’s keep this going please!!

Taking things back to yesterday… When my 6:00 am alarm started blaring in my ear, I decided that I needed bed more than workout. So I slept until 7:30 then headed to work to make an 8:30 meeting. I picked up some Dunks on my way in, and had a mug of oatmeal with strawberries!

After my two morning meetings, I got a day pass to a gym near my office. I did a solid hour on the ArcTrainer (while watching the news/freaking out), a quick stretch, then took a shower.

When I got back I had the same lunch I had on Wednesday – a salad with spring mix, grape tomatoes, baby carrots, and a light balsamic dressing. I also had a Fage Greek yogurt on the side (I couldn’t take a picture because I ate during a meeting!).

The remainder of my afternoon was filled with meetings. I snacked on a Mint Chocolate Chunk Quest Bar…

And then a ton of other random stuff. There were so many snacks in our office cafeteria yesterday (popcorn, Tostitos and salsa, Teddy Grahams…) so I ended up snacking wayyy too much 😦 . I need to get out of this funk! I usually have much better self control, but for some reason these past several days (hmmm… weeks) have been bad.

At least I had a light, healthy dinner. Sweetgreen just started serving their fall menu!! I got an “Apple Pear Cheddar” salad with kale, mesclun, pears, apples, raw pecans, white cheddar, basil, and a little balsamic vinaigrette.

I spent the rest of my night chilling and doing lottttsss of wedding planning! We’re currently making our website which is really fun but kinda stressful. I’m excited for our save the dates to arrive so we can work on addressing those and sending them out ASAP!
